The 2 Big E’s: Easter & Engagement!

Happy Humpday!

I am long overdue for a post. Some new and big things are happening in my life that I am dying to share with my readers! If you follow me on social media, then many of you already know. But for the rest of you… I just got engaged this week!

My boyfriend fiance proposed to me on Easter in front of my family. I am the hardest person to surprise so this is sort of a funny story. He originally wanted to propose to me in New York City aka my dream city, but it would have been too obvious since it’s hard for us to take a day off work to travel up there. Then he thought he would be sweet to propose to me at our favorite location in Gettysburg overlooking the battlefields. So he called off work and arranged for this to happen, but of course me being stubborn and difficult I didn’t want to go down. I am literally the worst person in the world to surprise haha!

Instead, he decided to surprise me on Easter with my family around us. His original plan was to have an Easter egg hunt for me, but I said I was not hunting eggs unless there was money in them. I know, I know… I’m a terrible person lol! So he numbered the eggs from 1 to 14 and each egg had a sweet message inside. Once I opened up number 13, he grabbed the last egg from my basket, got down on my knee very nervously and asked me to marry him. I was speechless and kind of blacked out for a few seconds haha but then I said yes! I’m so happy we’re engaged and that my family could be there to be a part of it. Hopefully he learned his lesson for future surprises and to let ME plan them ha!

Before the engagement went down, we colored Easter eggs together. Of course, I picked up 2 boxes of Marvel egg kits since I’m a total nerd. We made really pretty eggs and decked them all out in stickers… Iron Man & Spider-Man! Then we got up early Sunday morning and got ready for church. After church, we went up to my mom’s for lunch where she made the cutest bunny bread ever! I almost didn’t want to eat it, but alas, I took the rabbit’s foot lol. Apparently, that brought me good luck because an hour later I got engaged 🙂 yay!

We left my mom’s and headed over to my aunt’s for even more Easter celebrating. Everyone loved the ring (as do I) and it was just a perfect/gorgeous day out. Got some sun, had a Easter egg hunt, and I got to see the baby! Apparently someone decided to hide an egg on the roof… I certainly was not capable of climbing up. I can barely reach the cabinets in my house.. short problems and all. It was the perfect day and I’m still thankful I got to be around my family and new fiance. It still doesn’t feel real. No big wedding plans yet, as I want a long engagement. So stay tuned for news on that!

Also, either today or sometime this week, I will be posting about the 21 Day Fix. I’m currently NOT a BeachBody coach anymore, but I still love the products. A lot of people have been telling me to try it so I dived in and just ordered it for myself. I’m currently on day 3 and loving it. So I’ll be posting details about that and I’ll also try to keep this thing updated more. I’ve been slacking, no more excuses!

Easter Recap + Healthy French Toast!

Happy Tuesday!

This week better not drag like last week. Then again, it is Tuesday already. I have a few fun things coming up: I’m ordering Insanity this week, since it’s on sale. I’m really excited to finally add that workout to my list. I’m going to follow the whole 60 day program and hopefully get the results that I want. A lot of the girls in my new workout group have started it, along with my coach. They love it. So hopefully that is here before Monday so I can get it started. I’ll be giving a weekly update on that along with meal plans and results. Also, this weekend is another comicon convention for me. Not a big one, but still pretty awesome. I’ll be heading to Pittsburgh for the weekend.

My Easter weekend couldn’t have been better. I didn’t have work Friday, which was amazing. Having a 3 day weekend was much needed. I woke up early and got a workout in with my sister. We did some stretching and finished TurboFire Fire 30. We went at our full intensity. My sister almost got sick from working out so hard hahaha.. not funny, but it’s a good feeling. She felt great afterwards and that’s how you should feel after a workout.

Later on in the evening, we got ready and headed down to our church for some dinner and to watch Passion of the Christ. They hooked up a projector and big screen for us all to watch it. We also ate tomato soup and toasted cheese, which I packed wheat bread and made it healthier. After the movie, we came home and watched The Hobbit before we passed out.

Saturday morning I woke up, ate a healthy breakfast, and then did some P90X Kenpo. I was amazed that I finished the whole workout without skipping any moves like I would normally do in the past. Afterwards, I got a shower, got ready, made a Shakeology shake, and then met my friend Gus at the movies to watch G.I. Joe. It was amazing, but I was disappointed that someone died way too soon. I don’t want to add any spoilers here so I will leave it at that. After the movie, my boyfriend finally came in. We went out for dinner and got some Chinese food. Thankfully the Weight Watchers website (which is going really well) has a “cheat sheet” for eating out. I loaded up my tray with the foods I always eat and calculate my points up so I know how much I can eat. After dinner, we hung out for rest of the night and then passed out since we had to get up early in the morning.

I woke up super early on Sunday because I was too excited. Easter has always been one of my favorite holidays, plus it’s another reason to spend time with the family. I made my sister and boyfriend’s basket up – but no worries, they got healthy foods. I also got some Easter baskets, 4 to be exact. I gave the candy and junk food away and kept the healthier snacks. After we exchanged gifts, we all got ready for church. Once church was over, we changed yet again and headed over to my aunt’s house for our annual Easter dinner tradition.

Yes, I might have splurged a little. But, I ate healthy all week preparing for this exact moment. Like I’ve said, it’s important to have a cheat day. Just don’t make it a daily habit! There was soooo much food, it was hard restraining myself. But I did and I was proud of myself. After everyone ate and finally settled in, we started playing the Wii together. My arm is pretty sore from it still, unfortunately. It’s always nice spending time with the family and seeing everyone. I’m still so thankful and happy to have such a huge family to do things with. Plus it helps that they’re super fun to hangout with.

We got home pretty late, but just in time for the season finale of The Walking Dead. I’m pretty upset it’s over and I am not looking forward to waiting until October to watch it again. But thankfully, one of my other favorite shows started back up for season 3 of Game of Thrones. So that should hold me over in the meantime. Monday was a lame day, it is Monday after all. But I did get to go to Hoss’s on my lunch break with the girls in my office. Krista had a birthday and no worries, I only had a cup of soup and a small salad. I usually can’t resist their food. Now on to a healthy breakfast recipe…

photo(13)For all of you breakfast lovers out there, I found a great healthy recipe! A healthier spin on the typical fattening french toast.

  • 4 pieces of a low calorie wheat break (I used Nickle’s bread – only 35 calories a piece or 4 weight watchers points for all 4 slices)
  • 3 egg whites (only 1 weight watchers point)
  • Cinnamon
  • Syrup
  • Spray butter (0 calories)
  • 1 tsp of vanilla extract
  • 1/2 tsp of salt
  • 1/4 cup of unsweetened almond milk (2 weight watchers points)

Pretty simple and super healthy. To finish off my night tonight, I’ll be getting my workout on! I just did a shot of my E&E (energy and endurance supplment) from BeachBody and I feel super energized! For this all you need is 4 oz of water and a scoop of the powder, shake it up, and drink it 30 minutes before your workout to get energy. I am beyond ready to get my workout on! It tastes like lemonade, so happy I decided to order it! Plus it’s super cheap. Staying Healthy This Easter

10 Ways to stay Healthy this Easter

Easter is right around the corner, literally. It’s also one of my favorite holidays to spend with my family. Not only for the true meaning behind it, but the fun traditions as well. My family and I always have a huge family dinner together, have an Easter egg hunt, and color Easter eggs. Even though I’m 23 years old, I still receive Easter baskets full of goodies as well. Don’t judge – they’re awesome! It makes me feel like a kid again.

My mom always fills my basket up with cans of Pringles, peanut butter eggs, bags of chips, candy bars, and more candy. This year, things are going to be different! My sister and boyfriend will also be making up a basket for me and they have been warned as well – fill it with healthy foods! I know what you’re thinking, what kind of Easter basket has healthy foods and no sweets? I’m here to tell you some healthy foods that you’ll love! I’m also going to give a list of 10 other ways to stay healthy as well. Just because it’s a holiday, doesn’t mean you can slack on your nutrition and fitness. So let’s get started!

One of my favorite things to snack on it anything filled with peanut butter, but if it’s glazed with chocolate? My heart simply melts. After carefully doing some research on healthy little candies, I found a recipe that seemed doable.

Protein Snickers Bar

For the bottom chocolate layer:

  • 1 scoop of chocolate protein (I’ll be using chocolate shakeology)
  • 1.5 TBS of unsweetened cocoa powder
  • 1 packet of stevia
  • 2 TBS of almond flour
  • ¼ cup of water

For the caramel peanut butter:

  • ¼ cup peanut butter (or pb2)
  • ¼ cup vanilla protein powder
  • 1.5 TBS of all natural honey
  • ¼ cup peanuts, chopped
  • ¼ TSP salt

For the chocolate topping

  • 1 oz unsweetened baking chocolate
  • 1 TSP coconut oil
  • 2 packets of stevia

Directions:

Line a baking sheet with parchment paper and set aside. In a small bowl, combine all ingredients for the bottom chocolate layer with just enough water to make a thick batter. Spread this over your parchment paper in a large rectangular shape.

In a small saucepan, heat honey over medium heat until boiling (be sure to constantly stir while the mixture is heating). Remove from heat and quickly add your peanut butter, vanilla protein, and salt. Stir until mixture is well combined, then pour over your parchment paper. Spread mixture out on top of your chocolate layer and sprinkle peanuts on top (work as quickly as possible).

In another small saucepan, heat the chocolate and coconut oil until melted. Add the stevia then pour chocolate over your peanut layer. Spread and smooth the chocolate out with the back of a spoon. Place in freezer for at least 2 hours or until hardened. Remove and cut into 10 bars. Store in freezer. Enjoy!

Nutrition Facts

Serves 10

Calories per bar: 120

Fat: 7.6 g

Carbs: 7 g

Fiber: 2 g

Protein: 8 g

Weight Watchers Points: 3 per bar.

Compare that to any type of candy out there and you’ll be amazed! Plus these are much healthier. Now, on to some other ways to stay healthy this holiday.

To ways to stay healthy for Easter

  1. The first option is what I said above, eliminating candy bars and replacing them with homemade ones.
  2. Instead of giving bags of chips, find a healthy alternative. Special K cracker chips are healthy and taste amazing. Less calories and less fat compared to other brands. Pita chips are also a great alternative, get the plain ones. These go great with hummus or salsa!
  3. Don’t have time or the extra money to make your own candy bars? Try buying healthier ones. You don’t need snickers when you get pick up some Weight Watchers bars. These are light in points (plus calories and fat) and are loaded with chocolate. This will satisfy your craving! For the men, get them some protein bars. This will make them happy and fill them up compared to snickers.
  4. Get a workout in! Sunday might not be ideal to workout, especially if you wake up early, go to church, and then eat family dinner. So try go harder Saturday. For me, I’m doing a two-a-day workout. Waking up early, doing some TurboFire and then adding some P90X to the mix. This way, you won’t feel so guilty if you do splurge a little.
  5. Portion Control. You don’t need 5 cups of noodles, 4 stuffing balls, and a lot of ham to be happy. Cut everything in half! Also, try staying away from red meats. This is hard for your body to break down and is loaded in fat and sodium. Or, if you can’t stay away, limit your intake. Eat slow and allow your body the chance to feel full before stuffing yourself.
  6. Water. I learned a helpful little tip with water; drink a glass before your meal. But try to avoid drinking a lot of water during your meal, because this makes it harder for your body to digest. Only drink if you absolutely need to. The more water you drink, the better. This will help flush out the toxins in your body.
  7. Participate in the Easter egg hunt. Even if you don’t want to find the eggs, tag along with a kid. This will be a nice little exercise and great bonding time with your family.
  8. No extras. I simply mean don’t be adding extra ingredients to the food that you don’t need. You don’t know what the person added to the food. Avoid adding extra salt, as this makes your body retain water and bloat. Not only do you look big, you feel big… which makes you feel crappy. Also, don’t add the extra gravy to everything. It’s one thing to add a small amount to mashed potatoes, but you don’t need it on your noodles and stuffing.
  9. Veg Head. Go lighter on the breads and go heavier on the vegetables.
  10. Breakfast. Eat a bigger and healthier breakfast in the morning to fill you up, that way you don’t go heavy on the lunch or dinner. A bigger breakfast also helps boost your metabolism, which helps to burn more calories throughout the day. Win win!

Here is also a post healthy tip: If you get the chance to color Easter eggs, save the eggs. Hard boiled eggs are great in protein and fill you up. I add them to my salads, breakfast, or just a simple fast snack. These go a long way and the best part is, they’re already done!
