What’s Up With Me?

Good morning and Happy Tuesday 🙂

I just wanted to write a small post this morning and let everyone know what’s up with me. I’m currently working on designing a new theme, layout, pictures, and new set up with this blog. I feel I’ve come such a long way since when I first started blogging and it’s time to spruce things up.

So for now, I’m making lists of everything I need to change and will be spending time on here mainly organizing. Once I get everything cleaned up, I’ll begin writing more. Stay tuned for more updates!

TIU Meal: Chili in a Bowl

Thursday evening…

Simply means Friday is a few hours away. Which also means the premier of Thor is 24 hours away! AHHH! Anyways, got a little side tracked. Ahem. Tonight’s post is another recipe from the Tone It Up plan. I can’t get enough of their recipes and neither can by boyfriend. He helped me prepare this yummy meal last night, very proud of him! So let’s get started…

ingredients

Very few ingredients are needed, which is why I make this meal a lot. These are also ingredients I usually have on hand at all times. What you need…

  • 1 Bell Pepper (any color will do.. I just happened to have an orange one)
  • 4 oz of Ground Turkey (I always use Perdue.. less fat and calories)
  • 1 Can of Diced Tomatoes
  • 1 Can of Kidney Beans
  • 1/4 Cup of Diced Jalapenos
  • 1/4 Cup of Onion, Diced
  • 1 tsp. of Chili Powder (you can put as much as you like depending how hot you want it)
  • 1/2 tsp. of Pepper + Salt
  • 1 cup of Vegetable Broth
  • Optional: add a cup of water, depending on the consistency you want

In a skillet, start by browning your turkey meat. I made them into small patties and used a potato masher to mash up the meat… duh. Cook the meat until brown.

veggies

While your meat is cooking, start dicing up your veggies.

In a medium sauce pan, add your kidney beans and vegetable broth. Bring the liquid to a simmer.

seasonings

Once your beans are simmering, add in your tomatoes and seasonings. Stir ingredients together and turn heat down low. Let this cook for about 5 minutes.

Add in your veggies with the turkey meat.

Stir together until the veggies start to soften up. Optional: add in 2 tbsp. of extra virgin olive oil and salt to give the veggies more flavor and to speed up the process.

After your veggies are cooked, the meat, and tomatoes are hot… add all ingredients into the medium sauce pan. Give this a little stir and add in your cup of water. Let the water heat up for about 3 minutes.

Pour into a bowl and enjoy!

This makes about 6 servings, so pack this for your lunch for work the next day! Simple, easy, and healthy. Did I mention how amazing this tastes? I love that it’s not too spicy or hot. It’s the perfect amount of heat.

Getting Back on Track!

After careful consideration, research, and talking with different people I have decided on something new to try and give a new review about! I’m getting back on track! I finally realized a lot of things that were holding me back from reaching my goals. Now that I have finally learned what they are, I’m going to make a plan, post about it, and give weekly updates!

If you haven’t heard, a lot of people have switched over to something called the Paleo Diet or simply known as “the caveman diet.”

No, this isn’t something where you just eat dirt and twigs. To break it down, you simply eat fresh foods that are not processed… just like the cavemen did. A close friend of mine began this journey a few months ago and has lost a ton of weight and has done nothing but brag about this new lifestyle change. So why wouldn’t I want to experience this for myself and see what the rage is all about?

My boyfriend and myself went grocery shopping last night where I picked up all the foods I needed for this week. I said goodbye to carbs and bad foods yesterday and will fully be committed to this. I’m excited to go into more details tomorrow, so stay tuned!

Also tonight, I’ll be writing out my weekly workout schedule, more info about the diet, and will be starting ChaLean Extreme again. I will post all of this tomorrow. The reason I am starting CLX again is because I only completed 2 months of the program and only wrote about the first month. My goal is to finish out the program and give a full update on it!

Hi Summer, where did you go so fast?!

I didn’t even realize that it’s been 2 months since my last post! Where has this summer gone?! In a few short weeks, Fall will be here before we know it. Once I realized how long it’s been since my last post, I knew I had to update everyone who reads my blog with some new things going on and what to be expecting…

The main reason for my lack of posting is due to my laptop has finally died. Well, not totally but my last post I tried entering froze up and didn’t post. Nothing makes a writer more mad than when you spend 2 hours writing and then it gets deleted. I almost started crying… well actually, I almost smashed my laptop. But I digress… I am in the market for a brand new computer. Desk and all! I have missed writing so much and I have been getting a lot of feedback requesting more posts to be published. I simply can’t let this go on any longer!

I recently obtained a new medical job. This has been keeping me a little busy, but now I’m finally comfortable with everything here and so much happier than I was at my last job. Thank God! My last job just wasn’t working out for me and has held me back from so much, due to always being stressed out and just overall not happy. So now I am finally back on track with my diet, workouts, and healthy lifestyle and can’t wait to finally share everything with you! Also, stay tuned for fun/healthy Fall recipes I have in store and for a brand new challenge group that I will be starting for the Fall. Plus I’ll be doing workout schedules, new BeachBody products, and reviews! If you would like to see specific posts, please comment here and let me know!

Where Have You Been All My Life?

Trying to figure if I still know how to use this thing while trying to not let that Rihanna song stick in my head…

Sorry for the lack of posting! To answer some questions, yes I’m still alive. Yes, I am still an active BeachBody coach. Yes, I will be posting more.

My last post was in March, yes March! Life has been crazy busy. Between weekend trips, prepping for the summer, and maintaining a social life, my social network life has been epically declining. My laptop is basically fried. Then again, it’s old! You can’t really have a functioning laptop that survived a college lifestyle.

I’ve been saving for a while now to get a brand new laptop or tablet. Not an excuse to ignore my blog, but an excuse none the less. A lot of great things have been happening for me: business and personal. First thing is first, my site needs a good cleaning!

I have a lot of editing and organizing to do.. Hopefully I can get everything fresh and ready by this weekend. That is my goal for this week! Make sure I stick with it guys. I’ve found new healthy recipes, BeachBody news, fitness goals, progress, and much, much more. So stay tuned!
